Koomal Chawool is a unique type of rice from Assam that can be eaten without cooking. Koomal Chawool or softened rice is prepared by Koomal Dhaan (Bora rice variety). Bora Dhaan is cooked in a large Kadai outside the house. When it is cooked they are spread on a flat surface to be sun-dried. Then the rice that is dried along with the shell is ground at traditional mills. They are very delicate and require care and timing.
